Linda Pettine was one of the first women in the United States to become a certified cognac educator and brings an understanding of cocktails and mixology to the classroom. Next week, Cindi Bigelow, chief executive of Bigelow Tea, will be on campus for a beverage competition Pettine helped organize. With Bigelow teas, students will compete using their own alcoholic and spirit-free recipes for Bigelow and a panel of judges to sample.
Winners will be able to present their recipes to an industry conference in Chicago this May. We went from one, front-of-the-house beverage course, to now where we have an entire slate of minors from sommelier to beer and fermentation. We want them to start a food truck, grow a farm, be a manager, start their own business, and be an entrepreneur.
Started as an idea of collecting documents and artifacts of culinary importance when the College of Culinary Arts was founded in , this collection grew to a point where it needed a home. The Culinary Arts Museum was the delightful result. The Museum, which opened in to house the growing collection, displays an impressive array of rare and ancient recipes and cookbooks and historic tools of the trade, including an astounding collection of cooking stoves.
Many of the cooking implements on exhibit would be unrecognizable as such without their very detailed labels. The vast variety of exhibits spans the history of food and food preparation. Paul Fritzsche donated 7, rare cookbooks in Zack Hanle of Bon Appetit magazine donated over 4, menus from around the world. Much of the Szathmary collection focused on travel dining, with menus, china, cutlery and other artifacts from dining on railroads, ships and airlines.
Other major collections have since come to the Culinary Arts Museum, which continues to grow. Some of the highlights of the collection are:.
